Yes, you should be able to do that. If you have the access to Google Cloud Platform or can get one and have the required skillset inhouse.  Though, do please remember that there is a cost from Server Side GTM that Google Cloud will charge, while implementation with Datahash is sponsored by Snapchat for 1 year and only if you continue using Datahash after the first year, you'll have to pay to them directly. Also, with Server Side GTM, you may need to ensure some monitoring in case of website changes, and maintenance or upgrades whenever new versions of Conversion API are released by Snap.
